Mango marinade for chicken pieces

Ingredients

  • 2 cups mango, diced (fresh/tinned)
  • 1 cup onion, chopped
  • 1 tablespoon ginger, grated
  • 1 tablespoon garlic, chopped
  • 2 tablespoons cider vinegar
  • 1 chilli, deseeded and chopped (optional)
  • ½ cup mango juice

Directions

  1. Whiz the ingredients and one cup of mango in a food processor and then combine with unprocessed mango.
  2. Pour over chicken and marinade for 2 hours.
  3. Bake for 40 – 50 minutes at 220°C until golden and the chicken is cooked.
