Mango marinade for chicken pieces
- 2 cups mango, diced (fresh/tinned)
- 1 cup onion, chopped
- 1 tablespoon ginger, grated
- 1 tablespoon garlic, chopped
- 2 tablespoons cider vinegar
- 1 chilli, deseeded and chopped (optional)
- ½ cup mango juice
- Whiz the ingredients and one cup of mango in a food processor and then combine with unprocessed mango.
- Pour over chicken and marinade for 2 hours.
- Bake for 40 – 50 minutes at 220°C until golden and the chicken is cooked.
